Ingredients:

- 3/4 Cup of organic flour
- 1 egg (or for the vegan version 2 tablespoons of water)
- 1Tbsp Extra Virgin Olive oil
- pinch of sea salt
- 1 small sweet potato
- 1 table spoon of parsley
- 1 brown onion chopped finely
- 2 cloves of garlic chopped
- 1Tbsp of organic maple syrup
- 1/4 cup of water
- 1/4 cup of flour (for dusting the pasta)
- season to taste
- 2Tbsp of Extra virgin olive oil
- 1 clove of garlic chopped
- 1Tbsp of fresh basil torn
- In a bowl, make a well with the flour, add the egg/water and olive oil and salt to the center.
- from the center, gradually stir in the flour until it is all combined
- knead the dough on a floured surface for about 10 minutes or until the dough is no longer sticky.
- Cover in plastic wrap or put in a paper bag and put in the fridge for an hour.
- Take the pasta dough out of the fridge while you prepare the filling
- Steam the sweet potato (this is so it contains less moisture than if it was boiled)
- add some olive oil to the pan and caramelize the onion with the maple syrup for 2 mins
- add the garlic and cook for a further 1 min, set aside to cool.
- separate the pasta dough into 4 portions
- on a floured surface roll the pasta dough to about 1 millimeter thick
- Cut into squares that will allow for about 1tsp of filling and add filling to one square
- with some water wipe the edge of the square, and cover with another pasta square
- using a fork press the edges of the dough together to form a ravioli.
- Dust the square with flour
- repeat until all the pasta is used.
- in a pot bring 1Ltr of water to the boil
- add your ravioli and cook for 12 minutes or until tender.
- add your desired sauce.
- In a pan heat some olive oil
- add the garlic and cook for 1 minute or until fragrant
- take off the heat and add the basil
